This washed coffee comes from the Gaikundo Coffee Factory, located in Nyeri County, Central Kenya. Established in 1986, Gaikundo is part of the Rumukia Farmers Cooperative Society, a collective of 564 small-scale farmers, each tending to about half a hectare of land. Sitting at an elevation of 1,850 meters, the factory is positioned right on the border of Othaya and Mukurweini. With the Aberdare Range in the background, farmers can catch a glimpse of Mt. Kenya on clear days.
For this particular lot, farmers carefully handpick only fully ripe cherries before delivering them to Gaikundo. Once there, the cherries go through hand-sorting and weighing before being de-pulped. They then undergo a 24-hour fermentation process in tanks before being thoroughly washed with fresh, flowing water. After washing, the beans are spread out on raised drying beds for 14–21 days until they reach the right moisture level. Finally, they are hand-sorted once more before being sent to the dry mill for milling, grading, and bagging.
